IMG_4345There’s no way you could possibly not want to dive into this plate of prettiness.

I mean seriously, look at those purple and orange carrot ribbons of vibrant colour, gems of pomegranate juiciness, soft fluffy white clouds of goats cheese, and fresh crisp green peppery watercress. Tell me you’re not salivating.

And I haven’t even mentioned the apple cider, maple and Dijon dressing drizzled over the top.

I’d probably insert an emoji here, if I could. You know the one with eyes wide open in dumbfounded shock.

There’s no story to go with this, it’s just too pretty not to share.

The only thing I will say is that this salad is also packed with vitamin goodness. We all know carrots help you see in the dark, however they are also great at flushing out toxins and as they’re packed with antioxidants, they also promote healthier skin. It seems as though watercress has taken a bit of a back seat on the superfood front recently, somewhat overshadowed by big cousin Kale, however the peppery leaves are packed with vitamins and minerals.

If you don’t make this, you’re missing out, and we should probably not be friends.

Serve on it’s own as a light lunch, or as a side dish for supper.

 

Ribbons & gems salad – serves two

1 large purple carrot – peeled and then sliced into ribbons using a potato peeler

1 large carrot – peeled and then sliced into ribbons using a potato peeler

1 large handful of watercress – washed and picked into smaller bunches of leaves

100g goats cheese – or quantity to taste

1 large handful of fresh pomegranate seeds – avoid shop bought packs of these, they’re much more flavoursome and fun to extract yourself, by slicing a pomegranate in half and whacking the outside of it with a wooden spoon over a bowl. *Tip – Don’t wear a white shirt while doing this

 

Dressing

1 tsp Dijon mustard

1½ tbsp maple syrup

2 tbsp apple cider vinegar

1 tbsp olive oil

 

Arrange ribbons of carrot and watercress leaves on a large flat plate, sprinkle over the goats cheese and lastly the pomegranate seeds.

Mix up the dressing in a jar, shaking  with the addition of each ingredient to combine.

Drizzle the dressing over the salad, and try not instagramming a picture before you dive in (if you do though, make sure you tag #cookeatreview).
